Description
A cozy, tender cake made with ripe summer peaches and warm brown sugar. Perfect for picnics or a sweet afternoon treat.
Ingredients
1/2 cup unsalted butter, melted
1 cup packed light brown sugar (plus extra for topping)
2 large eggs
1 tsp vanilla extract
1/2 cup sour cream
1 1/4 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2 ripe peaches, peeled and sliced
Instructions
1. Preheat oven to 350°F. Grease a 9×9-inch baking pan.
2. In a bowl, whisk melted butter and brown sugar. Add eggs and vanilla.
3. Stir in sour cream until smooth.
4. In a separate bowl, whisk flour, baking powder, baking soda, and salt.
5. Combine wet and dry ingredients until just mixed.
6. Pour batter into pan. Arrange peach slices on top. Sprinkle with extra brown sugar.
7. Bake for 35–40 minutes, until golden and toothpick comes out clean.
8. Cool for at least 15 minutes before slicing. Enjoy warm or chilled!
Notes
You can use canned peaches, just be sure to drain them well.
