Ingredients

1½ cups all-purpose flour

1½ cups old fashioned rolled oats

⅔ cup granulated sugar

1½ teaspoons baking powder

½ teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

⅔ cup milk

⅓ cup vegetable oil

2 large eggs

1 teaspoon vanilla bean paste

1 cup mashed ripe banana (about 2 bananas)

½ cup chocolate chips (optional)


Instructions

1. Preheat the oven to 375°F. Line a 12-cup muffin pan with paper liners.

2. In a large bowl, whisk together flour, oats, sugar, baking powder, baking soda, cinnamon, and salt.

3. In a medium bowl, whisk together milk, oil, eggs, and vanilla. Stir in mashed banana.

4. Pour the wet mixture into the dry ingredients and stir until combined. Stir in chocolate chips, if using.

5. Divide the batter among the paper liners. Sprinkle with extra oats and cinnamon, if desired.

6. Bake for 18 to 22 minutes or until golden brown and centers are firm. Cool in pan for a few minutes, then transfer to a wire rack.
