Description

A classic, comforting banana bread that’s easy to make and full of flavor.

Ingredients

Scale

3 medium very ripe bananas, peeled (about 1 1/2 cups mashed)

1/3 cup butter, melted

1/2 teaspoon baking soda

1 pinch salt

3/4 cup sugar

1 large egg, beaten

1 teaspoon vanilla bean paste

1 1/2 cups all-purpose flour

Instructions

1. Preheat oven to 350°F (175°C) and butter an 8×4-inch loaf pan.

2. In a mixing bowl, mash bananas until smooth. Stir in melted butter.

3. Mix in baking soda and salt. Stir in sugar, beaten egg, and vanilla bean paste.

4. Mix in the flour until just combined.

5. Pour batter into prepared pan.

6. Bake for 55 to 65 minutes, until a toothpick comes out clean.

7. Cool in the pan briefly, then remove and let cool completely before slicing.

Notes

Use overripe bananas for best flavor.

Tent with foil if the loaf browns too quickly.
