Description
Warm banana muffins with a sweet, crunchy streusel topping.
Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 ripe bananas, mashed
3/4 cup granulated sugar
1 large egg
1/3 cup melted unsalted butter
1/2 cup chopped walnuts (optional)
1/4 cup all-purpose flour (streusel)
2 tablespoons brown sugar (streusel)
1 tablespoon cold butter (streusel)
Instructions
1. Preheat oven to 375°F. Line a muffin tin with paper liners.
2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
3. In another bowl, mash bananas and mix in sugar, egg, and melted butter.
4. Combine wet and dry ingredients until just mixed. Fold in walnuts if using.
5. For streusel, mix flour and brown sugar. Add cold butter, rubbing until crumbly.
6. Fill muffin cups 2/3 full with batter. Top with streusel.
7. Bake 18-20 minutes until golden. Cool in pan for 5 minutes before transferring to a rack.
Notes
Use overripe bananas for best flavor.
Avoid overmixing to keep muffins tender.
